If underexposed fan of the cult-ish fast food burger joint I have been rapid, since i tried my first Double-Double (that’s two patties, two slices of cheese) a few years back. As for the burgers, in my book it’s weird because it’s not beef. Salty, sweet, savory, chewy, crunchy and fresh. “Overrated,” people say? I do not believe it. Let me quote the much more eloquent Nick Solares, who said, “In-N-Out represents at least the Platonic ideal of what a fast-food hamburger should be.”

When it comes to Copycat recipes, capturing the flavors you love doesn’t get more authentic than this. If you can’t get to your favorite regional fast foods, try making your own at-home favorites like Tommy’s Chili, Pioneer Fried Chicken, and of course, animal-style fries to go with this awesome Double Double.

Kenji spent a lot of time and effort figuring out the ingredients in this animal-style Double In-N-Out, and with a few minor tweaks, this recipe literally follows suit (like cooking onions in oil instead of butter).
If you follow the instructions closely, you’ll sit down to eat and feel like you’ve brought In-N-Out Double Double into your kitchen. Don’t be discouraged by the steps you’ve taken. They are all light. Long but easy. And just like Kenji.
Like the original, this burger wannabe is best served fresh, once it’s grilled and assembled. Do not leave components at room temperature for more than 2 hours.
Store unassembled burger ingredients in the refrigerator for up to 3 days. You can leave the patties cooked or uncooked and reheat them in a pan with the mustard to make a fresh burger before serving.
You can freeze cooked burgers, preferably raw, and defrost them as needed. It is not recommended to freeze the sauce or other ingredients.

Prepare the sauce and onions the night before. You can also form meatballs up to 24 hours before cooking. If you plan on making French fries as well, you can cut up the potatoes and dip them the day before. Removes most of the starch which prevents perfect crunch.
To make a non-animal-style double-double:
1. Use a ¼-inch slice of raw onion in place of the caramelized onion.
2. No pickles
3. No mustard on a pancake
In N Out’s classic veggie option is the grilled cheese, which can also be ordered as an animal. Simply skip the beef patties and double the amount of cheese, adding the caramelized onion while hot to melt the cheese.
While In N Out doesn’t currently offer a mock beef burger, you can also substitute your favorite meat substitute for the beef burger in this recipe.
